Kale, Leek, and Cracked Pepper Verdelait Frittata

A warm, fluffy frittata is always a hit, and it’s the perfect centerpiece for a cozy weekend brunch spread. I love using free-range eggs from Vancouver Island’s Farmer Ben’s because the flavour is so rich and fresh—it really makes a difference. For a true taste of the season, I sauté local kale and leeks and mix them right into the eggs. Then, I add a generous helping of Pacific Wildfire Verdelait from Natural Pastures (Courtenay) for that creamy, savoury depth with just the right amount of spice. Pop it in the oven, and soon your home will smell divine.

Ingredients

  • 1 tbsp olive oil
  • 2 leeks, sliced (white parts only)
  • 6 B.C. eggs, cracked
  • 2 generous handfuls of baby kale (or your preferred locally grown greens)
  • 1 cup of Natural Pastures Pacific Wildfire Verdelait shredded (½ cup mixed in, ½ cup for topping)
  • Salt and pepper to taste

Preparation

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the leeks: In an 8″ cast iron skillet, heat olive oil over medium heat. Add leeks and sauté until golden brown. Remove from heat and set aside.
  3. Prepare the egg mixture: In a medium bowl, lightly beat the eggs. Stir in the sautéed leeks, kale, ½ cup of shredded Cracked Pepper Verdelait cheese, salt, and pepper.
  4. Cook the frittata base: Pour the egg mixture back into the skillet and cook over medium-low heat for about 8-10 minutes until the frittata is half-set.
  5. Top with cheese: Sprinkle the remaining ½ cup of Cracked Pepper Verdelait cheese on top.
  6. Bake: Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is fully set and golden brown on top.
  7. Serve: Slice and serve immediately, or store it covered for later use.
