This Frozen B.C. Peach Bellini is a refreshing twist on a classic cocktail*, perfect for end of-summer celebrations. Inspired by the fresh, juicy peaches harvested in B.C., this drink combines frozen B.C. peaches and local peach jam with sparkling wine to create a delightful, frosty beverage. It’s a simple yet elegant way to enjoy the last warm days of the season while showcasing the best of B.C. ingredients.

Ingredients

  • 16 oz (454 g) frozen B.C. peach slices (about 3 cups)
  • 1 bottle (750 ml) chilled sparkling wine Pink Elephant
  • 2 tablespoons of Rad Jamz peach jam
  • 4 oz Copperpenny Distilling Co. Just a Sec orange liqueur for a citrusy kick (optional)
  • 10 dashes orange bitters from Esquimalt Vermouth for an aromatic twist (optional)
  • Garnish: Fresh peach slice and sprig of mint
  • Glassware: Champagne flute or coupe glass

Preparation

  1. Clean, remove skins, and slice 4 or 5 fresh B.C. peaches. Lay flat on a parchment paper lined cookie sheet and freeze for a minimum of four hours.
  2. Blend the peach mixture: Combine the frozen peach slices, peach jam, orange liqueur (optional), and bitters (optional) in a blender. Add water as needed, approximately ¼ cup in lieu of liqueur and bitters. Blend until smooth.
  3. Prepare the glass: Add a scoop of the frozen peach mixture to each glass.
  4. Top with sparkling wine: Pour in the sparkling wine, gently stir, and serve immediately.
  5. Garnish: Add a fresh peach slice and a sprig of mint for a final touch.
