Found in southern B.C., fiddleheads are a delicacy available for a brief window from late April to late May.


Fiddleheads have a vibrant green flavour with a subtle nutty finish. Choose fiddleheads with firm, tight coils and bright colour. They’re best enjoyed boiled or steamed and pair nicely with white fish, or as a substitute to asparagus.
